I over shot my sacch' rest temps by 6 degrees F, and undershot my mash out temp by 10 degrees F. My goal OG was 1.072 and my actual was 1.070.

Ideas/guesses on how this may play out?
 
What were the actual temps for each? Sounds like you got plenty of conversion and I doubt you'll notice a difference with or without a mash out.
 
Why will the FG be higher? Less fermentables?

Yup, 158F is on the high side so you'll have less fermentable sugars. All the conversion work will be done by Alpha Amylase. Normally if you want a very fermentable wort, you shoot for ~150 which allows for both Alpha and Beta Amylase to do their work.
It should still finish just fine. You'll just have a higher FG. Also, you should have good head retention :)
