Headless Pirate Octoberfest:

I will be brewing this next weekend. This will be my first Octoberfest/Lager. If anyone sees anything that jumps out as critically wrong please let me know so I can adjust before I begin!

Recipe Type:
All Grain

Yeast:
Saflager W-34/70 Lager Dry Yeast

Yeast Starter:
No

Batch Size (Gallons):
5.5

Original Gravity:
1.065

Final Gravity:
1.012

Boiling Time (Minutes):
90

Primary Fermentation (# of Days & Temp):
14 days @ 50 degrees or

Diacetyl Rest when 4 points from FG (# of Days & Temp):
48 hours @ 65 degrees

Secondary Fermentation (# of Days & Temp):
Bottled 8 weeks @ 38 degrees

Grain Bill:
6# German Pilsner Malt
6# Briess Goldpils Vienna Malt
1# Weyerman Caramunich Malt
1# Belgian Caravienne Malt

Hop Bill:
1oz US Tettnang Pellets
1oz German Hallertau Pellets

Other Ingredients:
12oz Shredded Coconut Flakes

Mash Schedule:
Single infusion mash (8.75 GAL) at 154 degrees for 90 minutes.

Hop Schedule:
1 oz. Tettnang @ 60 min
0.5 oz Hallertau @ 30 min
0.5 oz. Hallertau @ 15 min

Spice Schedule:
12oz Coconut Flakes @ 15 min

Priming Sugar
Brown Sugar: 6.06 OZ / .75 CUPS

O.G. 1.065
F.G. 1.012

If you're trying to do a traditional one you are quite off with the OG, possibly lack of munich, the cara, galaxy and the spices.. But I guess you're not going for a traditional festbier.
 
I was using a festbier as a base and then adding what I have enjoyed in fall/winter beers in the past. Do you think this is way off?

Comparing to a traditional festbier it's way off. But it's your beer and you do whatever you want to do, but I wouldn't call it a festbier any longer.
 
Recipe updated to what I actually brewed this past Saturday (20OCT). Tasted great before I put it in brew bucket. First signs of fermentation as of this morning (22OCT).
Will report in when its done!
