I have used subpar sour beer to deglaze sauteed oyster and button mushrooms, it was DELICOUS!

Much better than delgazing with white or red wine.

Even bland sour beer makes a damn good sauce.
 
When my dad gave me all his homebrewing equipment, he also gave me all his bottles. There were 6 beers in there from when he used to brew, that were bottled in 2010.

They were almost complete vinegar. I have cooked with that in lieu of wine for a ton of recipes and they turn out awesome. Not a bad use of "bad" beer.
