I got a can of vintners harvest elderberry purée. I plan on using it for a secondary fruit fermentation in a mixed culture sour. The only other time I’ve fruited a sour beer was with some apricot purée. That was a 49 oz can in a 5 gallon batch, which I think turned out pretty well. This elderberry can is 96 oz.

Does anyone have any suggested proportions for elderberry? I’m wondering if the 96 oz is too much for a 5 gal batch. I have enough sour stock that I could dose a larger quantity. Maybe 7-9 gallons?
