So, after many years, I finally brewed two of Dave Brockington’s recipes. Sister Star of the Sun, slightly modified, of course, and his New Stout II. Sister Star is a nice ale but, for the New Stout II, I just couldn’t bring myself to go with 3 lbs of roasted barley. Actually, it would have been about 3 ½ lbs after I scaled up this into the 70’s. I backed off on the roasted barley a bit to 2 ½ lbs. I should have backed off more. While it is nice and smooth, the roast is still over the top – my fault, I thought I would enjoy a winning recipe in its category in the Nationals. Anybody else try his recipe? How did it turn out for you? I parked this one in hopes that a few months of aging will mellow it out. It blends well as is with an ESB, though.
