for the Edworts Apfelwein, after of course you've killed off the yeast?
I would like it a bit sweeter and have the wine conditioner...just wonder if anyone has done this?
Well, you don't "kill off the yeast". But once the cider is completely clear, you can add the wine conditioner with has potassium sorbate in it (to inhibit yeast reproduction) and sweeteners. so, yes, it can be used to sweeten a cider (but won't allow carbonation, of course).

Because of the sorbate in it, it's important to only add it according to the package directions. After that, if you need more sweetening, you can add honey or sugar (dissolved in water to make a simple syrup), or fruit juice.
