Can I keep my brew in plastic for multiple months?

I am making cheap closet wine, the taste here is unimportant, all that matters is that it has alcohol and that it's safe to drink, once the fermentation is complete, can I keep the brew inside the plastic bottle in which it was made? ideally for months
 
You can do that but you would be wise to minimize the exposure to oxygen on top, and ensure a very good seal because it is easy for wine to turn into vinegar, there are bacteria in the air that can find their way into a fermenter over the course of many months. Ensure a good airlock and it should turn out fine.
