I have about 38' of 1/2" SS coiled in a pot about that big. I would like to have fit more, and if I went with a double coil, probably could have, but no regrets so far. I set my pot temp to about 3 or 4 degrees above my target mash temp, and it work fine.

I think i'm going to do 25 feet of 1/2 copper tube. I want to do SS but I keep finding posts about how people are destroying it because it's hard to bend. I can buy it pre-coiled but it's expensive and usually coiled really big. With copper I can easily make the coils smaller.

When it comes to SS coils it's better to get it done by a professional. Stainless Brewing (http://www.stainlessbrewing.com) will make a coil to whatever specs you want. If you keep it simple it's not much more than the cost of buying the tubing yourself.

Of course copper is much more DIY friendly, but not as maintenance free as SS.
