Hello. The perry that i'm making now is still fermenting, and I want to add more sharp juices, because perry, don't have enought acid for my taste. Can I add new juices into my perry while it fermenting?
 
You could do that, but since it is still fermenting, you don't know how it will turn out and equally don't know the effect of an addition. I would suggest waiting until fermentation completes and the perry clears before tasting and determining whether the acidity is lacking. At that point you could add citric acid to your taste.
