I brewed one of the popular NEIPA recipes. I dry hopped in the keg and it was extremely tasty.

Went on vacation and now it tastes more bitter than it was originally.

So do leaving dry hops in a kegs result in more bitterness over time?

Dry hops contribute a small amount of bitterness, but I'd guess that you're also noticing the bitterness more because the hoppy aromas have faded over time. Less aroma and flavor makes you more likely to notice the bitterness. As an extreme example, I once brewed an IPA with what turned out to be stale hops. The IBU level wasn't massive - maybe ~50 or so - but for lack of any other hoppy characteristics the beer was a gross, one-dimensional bitterness bomb.

I have the same issues. Wait for two more weeks, then the hoppy smell and aroma are almost all gone, and it tastes much more bitter than before. Guess this is common case?
