I'm brewing the NB recipe this weekend. I am planning on fermenting with the lager yeast at 65 degrees after searching on this forum. What I'm not clear on is what temperature I should "cellar" it at. It requires a minimum of two months, possibly more.
 
I've got mine at 55F for now. Seems to be coming along nicely. WLP029 German Ale/ Kölsch Yeast does a good job. I used Safale-04, but this was part of a brew day at OSU and I've had samples from people that used Kölsch yeasts and think they were better.
