any ideas for recipe given certain materials

Wonder if somebody has any clever tasty recipe given following poor grainbill:

3kg Crystal Malt
3kg Amber Malt
1.5kg Amber Malt Extract
Cascade, golding hops..
and loads of honey (love braggots)!!

these are leftovers before my next big buy, but can't wait another month till they come in.. I appreciate it if anyone can help out! cheers!!
 
Even for a braggot that is way too much crystal malt. I have heard conflicting reports over weather amber malt can self convert. If it can I would use the 3 kg, but ~.5 kg of the crystal, plus the extract, plus the honey (enough to get to ~1.100), moderate bittering addition with the goldings. How does that sound?
 
Sounds like a good one! In fact, I had no idea amber malt had a diastatic power issue..all i knew was that it was used a lot in porters..thanks for bringing that up!
hmmm.. confused now..

i wonder if there is any quick test that one can perform to examine this issue..
