Can someone give me a clone recipe for crisp? I am picking up 10 gallons of cider today from an orchard. I want to carbonate and bottle. Thank you
 
The word was they were using a blend of apples from foreign sources. (i.e. you can't get them here :( )
 
The problem with trying to duplicate commercial ciders is that they have total control over what apples they use. Unless you have access to a wide range of apples and juice your own and experiment with different combinations you'll never make what they make.
 
The bigger problem is backsweetening. Commercial ciders like Angry Orchard and Woodchuck are much much sweeter than anything you're making at home. If you're kegging, backsweetening is easy but if you're making cider at home and bottling it, pasteurizing sucks and it's difficult to reproduce commercial ciders.
