It's completely up to you- after reading the info in the sticky we have, it's up to you to decide.

I happen to use aluminum in brewing and in some of my cooking. Some people do not and will not.

(This is my nice way of saying we will NOT be having the stainless vs. aluminum debate again. There are plenty of discussions already on this topic, and it causes heated discussions when we re-debate this issue)
 
Aluminum = alzheimers :D

That said, I just ordered a burner that came with a 7.5 gallon aluminum pot, and I intend to use it for AG.
 
I use aluminum, but then again I use the clearly inferior batch sparge method too.
