I'm planning on making a Florida tej using locally sourced orange blossom honey and I'd like to use a native Florida plant for the bittering. I know that kudzu is an option, partly because it's so abundant down here, but I'm not sure if it's more bittering or more aroma. "Florida Kudzu Tej" has a nice ring to it.
