Mash
23qt of water @ 162.1f to reach a mash temp of 151f for 60 minutes. Sparge to reach preboil volume of 6 gal.
Carbonate to 2.8 vol

1/18/09 - Brewed
1/20/09 - Dumped trub, took a gravity reading, 1.060, candied banana, clovey, sweet, rich, very nice
1/22/09 - Took out a sample, 1.044, more complex, candied banana, fermentation seems to have slowed significantly
1/26/09 - Took out a sample, 1.032, a little burn, awesome flavor production, less banana esters
2/2/09 - Took a sample before racking to keg. 1.024, right on target. A little hot, awesome flavor, good ester characters
2/19/09 - Filetered w/1micron filter, started carbonating, 30psi @ 38f
2/20/09 - Relieved pressure before bed, set it at 14psi for remainder of carbing
2/21/09 - Tasting notes as follows



Appearance: Small offwhite head, some carbonation, little lacing and small ring around the glass for head retention. Need to leave it in the keg for a few more days to get carb up a little.

Aroma: Faint sweet malty flavors, toffee, caramel, sweet breadyness like a bread pudding or something. Some candied banana esters.

Flavor: Rich but balanced malty sweetness, more toffee and caramel, some candied banana and other fruity esters.

Mouthfeel: A little sweet but not cloying or overpowering, pretty well balanced, a little hot. Will probably improve as carbonation level improves.


Some backstory: I was planning on brewing a 7.5g batch after buying a 14.5g conical, got both the ingredients and conical at the same time. Got home, found out the conical doesn't fit in my fermeezer, returned it and exchanged it for a 7g conical, had to adjust batch down. This combined with ~82% efficiency combined to produce an 11.8% tripel. I'm very happy with how this came out, I think it will age very well.
 
I entered this one into the 2009 Longshot as a 18c and got back a combined average of 42/50 points. I'm going to crack one open soon and give it a good review now that it has some nice age on it.
