I am looking for some advice on a 2 gallon mini-mash clone of Avery's New World Porter. Using the grains listed on their site, I came up with the following:
(50% Efficiency)
OG: 1.056
FG: 1.014
IBU: 42
SRM: 40
Boil Volume: 1.25 gallons
Batch Size: 2.13 gallons
Yeast: Nottingham (75% AA)
2.00 lbs. Light DME
1.00 lbs. Munich 10L
6.00 oz. Chocolate
6.00 oz. Crystal 120L
2.00 oz. Black Patent
0.25 oz. Centennial @ 60
0.25 oz. Centennial @ 30
0.25 oz. Centennial @ 10
Stove Top Mash: 45 min. @ 150* in 2.5 qts. water. Sparge @ 170* with 2.5 qts. water.
My first question is: Do I need to cut down on the Munich and add another base malt? I believe that Munich can convert itself and the rest of the malts do not need converted. I could go .75 lbs. Munich, .75lbs 2-Row if I need too.
My next question is: Should I ommit the late addition hops? I want a little bit of the Centennial flavor and aroma, but I don't want so much that it doesn't compliment the beer.
