I'm no great brewer, but man do I love the honey flavor and aroma I just tasted in my honey blonde ale. The beer isn't particularly sweet, but it has a distinguished honey flavor and aroma (wildflower honey). It's not too overpowering, though, as I still taste the malt even in such a neutral beer.
So what I did is as follows:
1) I added 1 pound of honey at flameout. No pasteurization beforehand, just plain honey. I expected that the heat already in the wort would kill the vast majority of buggies.
2) I added 0.5 pounds of honey shortly after the krausen had clearly maxed out. Again, no pasteurization.
Just thought I'd share, as I think this beer will be deadly. And I kegged it, too. :rockin:
