Elderberry Wine Recipe


Ingredients:
  • 2½ lb elderberries
  • Campden tablets
  • 2¾ or 3 lb sugar
  • Wine yeast
  • Nutrient
  • Water
Method:
  1. Strip the elderberries from the stalks and wash well.
  2. Put into a fermenting bin and crush. Pour on 4 pints of water. Add 1 campden tablet, crushed and dissolved in a little warm water.
  3. Boil half of the sugar in 2 pints of water for 2 or 3 minutes and, when cool, mix into the pulp.
  4. Add the yeast and nutrient and cover and allow to ferment for 5 days, stirring daily.
  5. Strain and press and return to a clean fermenting bin.
  6. Boil the rest of the sugar in 1 pint of water for 2 or 3 minutes and, when cool, add to the rest.
  7. Cover again and leave for 3 or 4 days.
  8. Pour carefully into a gallon jar, leaving as much deposit behind as possible.
  9. Fill up the jar with cooled, boiled water to where the neck begins.
  10. Fit a fementation lock and leave until fermentation has finished.
  11. Rack, as necessary, and add 1 Campden tablet after the first racking.
  12. Syphon into bottles.
Makes 1 gallon of wine.

Could I use the same recipe for the damsons
 
another one I found on google a while back but haven't tried. please let me know how these turn out.


Damson wine recipe 1 of 2 (Country summer style)
Ingredients :-

3 lb. ripe damsons
3 lb. sugar
1 gallon cold water
pectic enzyme
campden tablets
gp wine yeast
yeast nutrients
Instructions :
pick or buy damsons as ripe as possible, remove stones and wash them well. put the 3lb. damsons in a large saucepan or preserving pan, and pour on a gallon of cold water. Bring to the boil and simmer until the damsons are tender but not mashy. strain off the liquid through muslin into a plastic bucket. the damsons can now be used as stewed fruit or for making jam. add 3lb. of granulated sugar to the liquid in the bucket and stir well with a plastic spoon until the sugar has dissolved. leave to cool right down, then add pectic enzyme and a crushed campden tablet. allow 24 covered in a warm atmosphere before stirring in the yeast and yeast nutrient. the leave in the warm for three days before you transfer into a fermentation demi-john, fit an airlock and ferment until dry, when the fermentation has stopped, rack and clear before bottling. some may be required during fermentation and a tablespoon of sugar added once or twice should do no harm. you will de able to drink it in six months or perhaps before that. but the longer you keep it the better it will be.
 
Elderberry is now started so thanks for all your help next job on my list marrow rum/wine has anyone tried it I did sone last year and it's good stuff
 
Always check recipes for the chemical balance - different fruits berries etc have different needs so a quick Google is a small price to pay for a good wine :)
