I've got a hefeweizen that's been in the fermenter for about 5 weeks now. I understand that hefes are intended to be had younger than other beers, so how long are they good for? I need to take a hefe with me on a trip, so, I have three options. Rack this one to a keg and let it sit 4 more weeks for the trip, let the existing hefe sit in the fermenter another 4 weeks before racking, or, drink this one now, and have another hefe that will be about 3 and a half weeks old for the trip.

I've heard of people drinking their hefe's after as little as 7 days. You should definitely get this batch into a keg. On the other end, I just found a hefe from last summer in the back of my fridge and it was still good, with all the appropriate flavors.

I say drink this & brew again! :mug:
