differences in brewing these beers

Whats the main differences in brewing these beers.
Toppling Goliath - king Sue/ Imperial IPA
Breckenridge Brewery- 471 small batch Imperial IPA
Ballast Point - Dorado Imperial IPA

I do not like the sweetness that comes from breckenridge or ballast point. I disliked breckenridge more then ballast point. I remember liking King Sue, Lightspeed, Hopsmack, Nelson Schmelsson, Sosus, and golden nugget from TG, but only had it some of them once. I enjoy the Pseudo Sue/Golden Nugget but those are APAs.

The 471 had too much going on for me
The Dorado I liked but a touch too sweet for me
All of the TG brews I really liked.

Do these flavors boil down to the malt used and how much does the temp of mashing effect the overall sweetness.

The hop profile doesnt bother me so much. I get that a Citra hopped beer is going to taste this way and a ____ hopped beer will taste this way. Im just trying to figure out how I need to brew the beer I want to achieve. Thanks Dan
