I was drinking a Dogfish Head Indian Brown Ale and it said it had caramelized sugar.
Any idea how this is achieved?

If you google it, there are plenty of pages on caramelizing sugar. You can caramelize & invert if you desire too. IIRC, BYO 150 Clones issue has a recipe for DFH IBA.
