Lagering questions.

Ok I am a new brewer that is looking to try his hand at a Red Stripe clone from AHS. I got the kit and am looking over the directions for the lagering process which I have yet to try. My question is this. It says Once you see signs of fermentation slowly cool temperature of the wort to 50-55 degrees (about a 1 degree per hour). I just aquired a freezer for kegging and am prepared to use this to lager this brew. My question is this. How do I get it to drop down to 50-55 degrees at that rate. seems really hard to regulate a 1 degree reduction every hour plus I am guessing I would be doing this manually some how? thats like a 22 hour process to over see. How can this be done of if it is not needed please give me a better solution. Thanks for all the help.
