Hi, been doing the "Riesling". Today was my 8 day mark.Checked my SG and according to the instructions the reading should be round about the 1.010 mark. Mine is at 0.991 after 8 days. The average temp was between 23-24 C. Did I do something wrong?
Any thoughts on this.

Fermentation speed is temperature dependent. The higher the temp, the faster the fermentation. You are fine, I'd rack into your secondary fermentation vessel now.
