If you only plan to brew this once, then use Amazon.com however if you think you might want to do this a few times, then go with Northern Brewer in bulk.
 
Careful with your hops...I agree with Brewskii, too much will be detrimental to this beer, you are better off keeping it at the same levels....however if you choose to adjust , watch the alpha acid levels of the Sorachi ace hops...if your not careful, you will take a hefeweizen and change it to a ipa...while ipa's are great beers, they will take the emphasis off of the other flavors.

All I did was boost the Sorachi Ace at 7 minutes from .25 to .5. Too much?

Possibly...the last 7 minutes are for aroma...reason being that you see, smell then taste in order to make a great beer...so by adding more for such a short time, you didn't change the alpha acid levels too much, but you may have changed the aroma in a way that could be better or worse...your the brewer, and some of the best beers I have ever made have come from trial and error, so experiment away and keep us in the loop as to how it turns out

the recipe looks great! I've passed it to a couple brewing friends (that aren't on HBT) and they all agree, it sounds like the perfect summer beer and must be brewed as soon as possible! I just need to get the hops..
 
Been browsing the forums for stuff to brew for the summer and this looks perfect! Looking forward to giving it a shot.
 
I have a pound of sorachi ace been looking for something to use... this is gonna be for next weekend!
 
Made this yesterday! OG came in high, great news, so I made 7 gallons. 3 in one fermentor 4 in another. It's happily bubbling away. Put one in a glass Carboy so i could see this yeast go to work. Pretty thick krausen! Now just have to get the limeade.

I boosted both motueka additions to 0.4oz (20 abd 7 so guess i added one!) and kept sorachi the same. We'll have to compare tasting notes!! But i used the 3068 yeast.....
 
How could someone turn that recipe into a partial mash if not familiar with all grain techniques?
 
Brew update:

Pitched the yeast around 10 p.m. Thursday. Activity was slow -- I didn't see any activity until 1 a.m. Saturday, so more than 24 hours. Since then, though, krausen has been high and my blowoff tube is bubbling well. Right now it's bubbling once every 6-7 seconds or so.

So I pitched the yeast 86 hours ago, but there has only been activity for 59 hours or so. Is it safe to drop in the Simple Lime, or should I wait a little longer for the krausen to settle?

My whole house smells like a fart today. Thought I had a blowout, then I thought my yeast had a blowout. Nope- it's the 3068 just bubbling away. Damn.

I would wait until you see slowing activity...the problem with the limeade and this recipe, is that your yeast will go crazy for it..so if the sugars from the grain haven't slowed down then it will be liking adding gas to a fire!

That's what I figured. I still have a good 1.5 inches of krausen in my carboy and my airlock is bubbling once every 6 seconds or so. I though it would die down by now, but those yeast are freakin' happy...
 
Holy cow - mine is not bubbling anymore and there is a thick layer of yeast on the bottom of the Carboy. Pitched Sunday at 4, now it's 48 hours later and the krausen hasn't fallen all the way yet, but it's pretty quiet in there.

Better get the limeade quick, eh?

I've been watching this one for a while and finally got it in my plan for a March brew. My LHBS doesn't stock either hop so I ordered online and await their arrival. This recipe looks crazy delicious and I'm excited to taste it, but worried it's not going to last very long as it sounds like a really tasty brew... I'll post results (and pics) when I get this moving.

Finally fit this in the pipeline! Picking up grain tomorrow and will be brewing on Saturday. Very much looking forward to tasting this! Pics to follow.

Resting in the carboy. My efficiency was WAY high for some reason so my OG was 1.069! I didn't make a starter this time and I'm slightly worried, but I'll keep my fingers crossed that it takes off in a day or so. I'll be ready with another vial of yeast, if needed, just in case the yeast lose the battle against the high OG. Looking forward to tasting this in late April/May.

Your yeast will take off soon...they love this stuff! You have a lot of head space in your fermentor
, did you make a 5 gallon batch?

Underpitching a wheat beer is not that bad. It will stress the yeast and produce more esters. What yeast did you use?

Mine was really high just like yours. I diluted the six gallon batch to seven gallons and split into two fermentors. Still had just one smack pack which was also split. It took off in 16 hours. Don't worry.

Yes. I intended to get about 6 gallons into the Carboy, but my boil off was higher than I expected so there is about 5 gallons in the 6.5 gallon Carboy.

Hefe IV (WLP380). Thanks for the vote of confidence. This is my first wheat beer.

Your gonna love it! After your done with this one, your gonna have to try my Blood Orange Hefei-Weizen....it's a little more work but it's all worth it!
 
I just wanted to verify your IBU's, your at 12, but every time I run the #'s in promash I'm getting around 21. Should I really scale back to get the 12 IBU's you show?

Try and keep you IBU's within the beer style....the Sorachi Ace will tip the scale on this beer, so make sure you keep the minutes correct and have the Alpha Acid level in the 8 to 11 range, if not scale back the amount or the time of the Sorachi Ace!
 
Slim &#8212; What's the advantage of keeping it in the primary for three weeks? This is my first hefe, but I know of various hefe recipes that call for 1-2 weeks in the primary and then bottle. I'm just curious your thoughts on this specific recipe.
