I tasted my first two batches today after one week in the bottle. They tasted too watery and it was almost as if the flavors weren't there. Will this change with time?
 
Sooo...
B) hopefully your bottles are not all in the fridge now... Wait at least another week to try another one. Bottle conditioning is an exercise in patience. They will almost always taste better with a minimum of two weeks.
C) there are many factors you can tweak to make a better beer; ensure your methods are sufficient to cover all the fundamentals. If you haven't yet, buy THE book by Charlie P. or look on-line at "How to Brew" for free. I have both on my shelves for reference material.
 
No, I only put six in the fridge, the rest are in the basement. I've read in some posts that it's a good idea to taste your beer at different intervals.
