Corny keg not carbonating at 25psi?

I've been researching this and only thing I can think of is that I either have a problem with my regulator or CO2 tank. I have a 5 gallon corny keg on the gas right now at 25psi at 35*F. It's been on the gas for a week. I check for gas leaks using dish soap in a spray bottle as always, no...

    What's the worst homebrewing SMELL?!!!

:( Let me tell you. It is the smell created when you leave a carboy full of dry hop remains and trub soaking in old oxiclean water for 2 weeks in your guest bathtub! The smell created by the yeast mixing with bacteria nastiness smells exactly like a toilet after a case of irritable bowel...

Boil off rate is HIGHLY variable! :ugh:

:o Normally I have a pretty good idea of what my starting volumes need to be pre-boil in order to end at the right volume of wort at flame out. Well, lets throw in the variables of humidity, outside temp and wind speed into the mix.... :drunk: Last night I brewed a Kolsch and should have...

    Just purchased BeerSmith 2.2....

I've used the trail software before but that was back when it was v.1.4 and I was new to brewing so it was still a bit confusing. Any tips or advice on making efficient use out of this software? Maybe things that are often overlooked by most users? Thanks! :mug:

How much yeast do I have? OLD YEAST!

I used some of the yeast I harvested off my last IPA for a starter. I'm planning to brew 11 gallons of 1.067 OG IPA this week. The yeast was harvested from the fermenter 75 days ago. I had about 1 full cup of thick, white yeast slurry in a sealed mason jar in the fridge. I made a 3.0 L...

Keeping mash temp <160F during dough in = huge efficiency boost!

I finally did it! High efficiency mash on an all-grain big beer! OG: 1.087 :D Previously I could never break 85%. This time I hit 91%! I use a cooler mash tun and since I do not preheat the cooler my strike water goes in at 175F! Then I usually add my milled grains to the tun directly...

Bottle conditioning lagers. How to calculate priming sugar?

I've been brewing ales for 3 years but this is my first lager. I will be ready to bottle within the month when it finishes a 6 week lagering period. I will be bottle priming. I know that when you use the calculators like the Tastybrew one: http://www.tastybrew.com/calculators/priming.html...

I want to use 1 lbs of Columbus leaf hops...what would you do?

As the title says, I have 1 pound of 2012 Columbus leaf hops in the deep freezer that are not going to get used unless I make a special recipe to use them in. though I'm not a big fan of the flavor of columbus they might make a pretty tasty DIPA, especially if I dry hop with Cascades as well...

Belgian Biscuit vs. Special Roast Malts?

Ok, So my LHBS only has Special Roast and my recipe calls for Biscuit. They tell me Special Roast is the closest substitute. Can someone who has brewed with both of these comment on differences? Should I use special roast 1:1 or cut back on it?

    Big Yeast Starter! How?

I always brew 11 gallon batches. In order to build enough yeast for a Lager I need to build up around 6L of starter in 2-3 steps if I want to use one vial of liquid yeast! What is the easiest way to build a starter this large? All I have is a 2L flask. I usually start with a 1L...

    Acidifying sparge water? Should I?

I have a water report and have pretty decent well water for brewing from everything I'm reading in Bru'n Water spreadsheet. Bru'n water seems to indicate that for my light beers (Cream ales, Blondes and wheats) that I should be adding a very small amount of Lactic Acid to both the mash and...

Lager - will a 5 day diacetyl rest cause problems?

so I am in the middle of fermenting my first lager. I have fermented at 50 F for 10 days untill SG was 6 points from FG and then brought temp up slowly to 60 F. I have to go out of town for 4 more days which will put the beer at 60 F for a total of 5 days. Is this too long for the diacetyl...

    US-05 stuck fermentation @ 65F?

Anyone ever had Chico strain (US-05) yeast get stuck at perfect temperatures? No idea how this happened but I have an Amber IPA (OG: 1.062) that is 12% Munich and 10% Crystal/Cara and after 18 days in primary @ 65F it just stopped fermenting and would not clear at all. I checked the gravity...

What is your least favorite month of the year?

What is your least favorite month of the year, and why? I will start: FEBRUARY why: February is the worst month for weather in Virginia. It is cold, wet, humid, muddy and generally nasty for any and all outdoor activities. I tend to brew more and drink too much in this month as there is...

Made my first major mistake after 2 years of brewing....

So I brewed an IPA last night, ended up killing a 6 pack of my APA in the 4 hours it took to brew.... Long story short I pitched the yeast at 70F, put my fermenters in my fermenting fridge, set my Johnson temp controller to 62F and went to sleep. When I woke up I was surprised to find the...

Can I pitch dry yeast + harvested slurry into a batch of beer?!

Odd question. Here's the deal. 1. I want to brew tonight but I don't have time to make a starter for my washed (2nd generation) US-05 yeast. 2. I am making a 5.5 gal batch of IPA (OG: 1.060). 3. I have 1 packet of US-05 and about 1 cup of washed slurry that is about 2 months old...
