I have a conical that I can add onto. Up to 50 gallons in one fermentor. I have not figured out how to do it yet but I am working on trying to figure out how to brew that much.

Does anyone know of more than 20 gallons out of a standard setup with converted kegs. I assume the 20 gallons is a double batch. Has anyone done more than that in a day?

I have had efficiency up to mid 80s. It is possible with the grin crushed just right. There are programs that will help calculate your strike temp. I use Beersmith and have an app on my phone and I hit my strike perfect each time.

I always use a mesh bag. It does not get it all as some of the pellet hops makes it through, but it does keep a lot in the bag.

I have heard up to 10 with shells and all. Remember that one of the reasons that this style was created was that their water was lacking calcium and the shells helped bring it up. I would check your water profile first so you do not end up with too much calcium.

I do not what water they use but I would suspect that it is filtered or unfiltered tap water. Try to go to the City of Santa Rosa web page and see if they have a city water profile. I would also call the brewery and ask they will probably tell you what kind of water they use. RRB 725 4th...
