    Adding Whiskey to My Brew

I've brewed 5 batches of the Northern Brewers Irish Red and obviously am rather fond of it....as are my family and friends. I've been reading about adding whiskey (Jameson) to the brew. Some threads I've read say to add it during the secondary and others during the bottling process. I'm looking...

    Quick Fermentation....

I brewed a True Brew Belgian extract kit on Sunday and fermentation was fast and furious. By late Monday afternoon the process had appeared to have stopped. The lid on my plastic vessel had bulged up considerably and a little of the wort had bubbled out of the airlock. Should I be concerned? I...

It was a partial boil and I added the remaining volume at the end and did get the correct final volume of 5 gallons. Thanks for the input all.

    Starting Gravity Question

I started brewing in the Fall of '10 and have 7 brews under my belt as of yesterday but for the 1st time I missed my starting gravity and don't know what happened. I brewed a True Brew Red Ale extract kit and was supposed to have a SG of 1.052-1.054 but ended up at 1.040 instead. Any thoughts...

    Carboy Question

I received a Carboy for Christmas and will be using it for the first time later this week. I've been reading up on them and was curious as to the difference between a blow-off tube and an air-lock or do they serve the same basic purpose? As always......thanks for helping out a newbie!

    Long Primary

Due to unforeseen circumstances I left a batch of Hefeweizen (extract) on primary for 2 months now and I was wondering if it's still ok to bottle at this point. Is there anything I should be concerned with or is it lost?

    Fermentation Question

Another related question....the final gravity is 1.012 which is right where it should be but there's a fair amount of foam on top of my brew which I haven't experienced before. Should I leave it....skim it off or just give it a little more time to dissipate? Again...thanks for the help!!

    Fermentation Question

I'm new to home brewing but have had good luck with my first 2 attempts, a Summer Wheat and an Oktoberfest. Last Saturday 10/1 I brewed a Bavarian Hefeweizen (True Brew extract Kit). I substituted a liquid Hefeweizen Ale Yeast rather than use the dry packet that came with the kit. Fermentation...
