    Oops, sorry for the faulty quote! Here's how it should have read... FWIW, Shiner cuts theirs with grapefruit. Pretty tasty stuff. I've never done a ginger, so I'm no expert, but from what I understand, I should be cut with some sort of citric acid. Good luck. Let us know how it turns out!

    Yeah, they distill that stuff just up the road from me in Weston, Mo. Pretty good stuff, and the "double chocolate" tastes just like chocolate milk! So, I've been buying a good bit of it myself.

    Thanks for the input! I think I'll just let it go. It would be nice if it hit the terminal gravity, but if doesn't NBD, it'll make a GREAT session beer! Just off the small sample, we're LOVING this one.

    So, I've maintained a fermentation temp of 70 deg for 2 weeks. I took the first gravity reading today, it's at 1.014. The recipe states a terminal gravity of 1.008, so it's getting there! We drank the sample (of course!), and it tasted awsome! Can't wait to get it carbed and cold. SWMBO even...

    If you haven't already, you could try to locate a case or two of SA Latitude 48 Deconstructed. They did what I believe your are trying to do. They used 5 hops from the 48 parallel (globally). Simcoe, Zeus, East Kent Goldings, Ahtanum and Hallertau were their choices. Very interesting experiment...
