    I tried all grain this time. I realize now that 6 1/2 lbs. of grain wasn't enough. I was basically "winging it"! 6 lbs 2-row, 4 oz. crystal 60, 6 oz. pilsner. Mashed at 155 degrees for 45 minutes, cooled, sparged, added water to 5 gallons, added yeast, had to leave for work. Thinking about...

    Boil size and pail dump

    Boiling 3 gallons for a five gallon batch is over-kill. You should be able to steep your grains / boil your wort in only 1 1/2 gallons of water. It cuts down the cooling time as well. You could always measure 5 gallons of plain water into your carboy and mark a line on it with tape or marker...

    I was just wondering what, if any, method you folks use to keep your recipes and notes on your individual beers. I thought I would share the form that I use for my brewing notes. I try to keep super clear notes so that I can replicate the ones that turn out to be crowd pleasing.

    Personally I rack to my secondary for every brew I make. It's a matter of clarity for me. I like to be able to see the beer clarify over the span of a week or two prior to bottling. I know it isn't necessary but it is my preference. As for tasting your samples...YES. I always sip after...

    What style do you brew most?

    I pretty much stay with Ales...Belgian Style, American, Scottish and English. There is so much you can do when you start out with one of these basics.
