    Mash Water/Grain Ratio

Woke up with this on my mind, no idea why; I know that some recipes call for a 1.25 quart of water to 1 lb grain ratio in the mash, where others call for 1.5. Does it make a difference?

    Brewing Bloopers and Blunders

We've all made them, and sometimes they are downright funny (and valuable learning experiences). So what are some of yours? I'll start: A few batches ago, without thinking about it I poured all 3 pounds of DME into my boiling wort. If you do that, it is impossible to stir fast enough to...

Is there a difference between a brown ale and a nut brown ale?

    Irish Midnight Red Ale- thoughts?

SWMBO brought me back a pound of midnight wheat from Oregon, because she is awesome like that. So, I am making up recipes to use it in. Seeing as how 1) fall is coming and 2) I love red ales, I am going to start with a red ale. Here's the recipe I came up with tonight- let me know what you...

    Melted plastic/metallic taste

Brewed a blonde ale a while back that included grits in the mash (did a cereal mash). Fermented with s-05 in a swamp cooler, but had a sudden cold snap so the fermentation was very slow to start. Cracked a few open; all have a horribly strong burnt plastic/metallic taste. I used well water, so...

First Use of Grits (Cereal Mash)

Brewing a blonde ale with stone ground yellow grits this upcoming weekend. I'm planning on using a cereal mash but have a few questions and I hope somebody on here has experience. I'm hoping to use a pound of raw grits, which I'm guessing will equal about a gallon or two of cooked grits. My...

    Ministry and beer

I'm in seminary and a candidate for ordination with the Methodist church. I just received word that I'm receiving an appointment as pastor at a small rural church in NC this upcoming summer. While I have no theological/moral complications with brewing, drinking and being a pastor, I'm wondering...

To add more yeast or not...

I made three gallons of mead with 10 lbs of honey. OG was 1.111. It's been fermenting for a month, just moved to secondary, and now it's at 1.025. I want a dry mead, as I plan on dividing this into three one gallon size batches and adding different fruit, herbs and spices. Should I pitch some...

    Is Beekeeping a Constitutional right?

Turned on the news this morning and this is one of the top stories: http://www.wral.com/news/local/story/10724457/ To summarize it: a lady in a town about an hour north of me starting keeping bees in her back yard last March, and the town passed an ordinance last May saying all bee hives had...

I'm an idiot and I'm pissed off about it

I drive a 97 Chevy S-10 pickup truck. I live at the bottom of a hill, right beside a pond. Last night, my wife parked in my parking spot, so I parked beside her in the grass. It then rained all night long. When I tried to go to the office this morning, my truck was stuck in the mud. Every...

I don't know how to design a wine!

I'm mostly a beer brewer, but I want to make a cranberry wine to give away as a Christmas present next year. However, I don't know what I'm doing when it comes to wine recipes. Are there any useful wine recipe calculators out there? I've got BrewTarget on my computer, and from it can do beer...

What yeast for a dry mead?

I'll be making 3 gallons of mead this weekend with 9 pounds of honey. I want this to be dry, as I will be adding various flavors to it down the road. Right now I'm thinking of using Lalvin 1118. Anybody use this for their dry meads? Is there a preferred yeast anybody using? (I don't want to use...

    Southern Summer Blonde ale- critique?

In the south, it's hot as crap and humid from April to September. So, I'm creating a good summer beer that highlights some of my Southern roots. Here's the idea that I threw together while ignoring the in-laws tonight: 4.25 lbs extra light DME 1 lb grits (have to cereal mash this one) 8 oz...

    Three Dry Meads idea... thoughts?

Here's the plan: In a few weeks, I am going to make 3 gallons of a dry mead using 9 pounds of local honey (does this seem right? what yeast would make a good dry mead? I'm in California with SWMBO's family right now and don't have access to all my books). Then, I'm going to divide these into...

    Stone Brewing tour

While visiting SWMBO's family for the holidays, I went to the Stone Brewery in Escondido, CA with my wife and her BIL. It was nice, but we voted it not worth it. The place is very POSH, not what we expected at all (never been to a brewery with valet parking). They have a nice, distinctive style...

    Dxtrin vs Belgian Caramel Pils

Brewing a red ale this weekend. Went to the LHBS to buy ingredients this afternoon. My recipe calls for 1/2 lb of Belgian Caramel Pils, which they did not have and swore they never heard of. Looking at their grains, the Dextrin malt said in there it was also known as Caramel Pils, so I went with...
