    Fermenting to hot?

    I have brewed pale ales in the mid 70's with Fermentis US-05 which is about the same as the 1056. You do get a bit more fruity esters, but I like that in cascade hopped APA.

    I use a turkey fryer with its included 7gallon pot. I do preheat my sparge water in a second 5gal pot on the stove though, but SWMBO likes gas burners so that works suprisingly well. I wouldn't have any problem with a BIAB or extract on the stove if I had to. :mug: Just something to think...

    Not at all. It is the hightlight of my day whenever I wake up to a bubbling airlock or blowoff. Just another hint... start sniffing your airlock to get that next fix.

    If I put beer in the fridge, I'm usually checking it every 10 minutes until its cold enough to drink right away. But that usually only happens after a good night and I don't realize the fridge was empty.:drunk: Oh... and what Ichthy and Tipsy said too.

    I'm sure that stirring the mash 2-3 times would bump that up a bit. Without stirring, I would be concerned about even temperatures in the mash. If it was mashed in too much or too little water, that will also affect efficiency as the enzymes won't be able to effectively work as well and...

    Anyone check the final gravity of Two Hearted?

    I'll be looking for your results as well. I love the stuff. I tried to work up something similar but it came out too dry. If I try it again I'll mash at a higher temp to keep the FG up a bit.

    Mash Tun Question

    I use the same stainless braid with brass hose barb. No corrosion so far on it. The braid is really holding up well. I have a 5gal igloo mash tun and use a metal broomstick to stir the mash which is pretty rough on the braid somtimes. I haven't had any damage yet.

    If you are seeing bubbles rising in the carboy, it means the yeast are still working away. I would guess you have an airlock problem. Get a new hydrometer, and in the mean time let it continue to do its thing. I would bet that the next reading you take will be well under 1.089.
