Home Depot 5 gallon bucket lid spins?

Yes. In a pinch, I have used plastic trash cans I got at Family Dollar to primary and secondary with no problems. I did wrap the lid with plastic wrap when I used it for a secondary, but it still wasn't air tight. It still made great beer though. There is a symbol on the bottom of plastic...

First IPA with Columbus hops - critique please

I think the Columbus hops will completely overpower the Cascade hops. You may want to consider moving the Cascade additions to the end of your boil/dry hop. I recently brewed a similar batch using Simcoe and Cascade. It tasted very similar to a Simcoe smash I made.

    pale malt extract (dumb question)

Any of them will work fine for an amber. I would only worry about the color of the extract if I was trying to make a very pale recipe.

    Too Much Head

This happened to me. It was due to over carbonation. I made a pale ale and experimented with priming for 3.0 volumes CO2. The only other thing different in the recipe was the use of 1 lb of Gambrius Honey Malt. It tasted great, but foamed like crazy. Last month, I poured a bottle of it at a...

Getting the Sh!ts from my beer - Please help

It could be a combination of live yeast and something you ate. Has your diet changed recently? Yeast plus sugary food, like cookies, can do it to me.

    Hop bags in the way

I just boil the hops without a bag. For my last few batches, I've strained during transfer with the nylon paint straining bags from Lowes. But honestly, I haven't noticed anything different in the taste from when I just dumped everything into the fermentation bucket. For me, it has become a...

    Secondary Fermentation?

If you want to use the Coopers tablets, you don't need to use a bottling bucket. You can bottle straight from the fermenter. You would have to take extra care to keep the racking cane from sucking up or disturbing the trub (it's harder than it sounds, at least for me). The procedure you listed...

    20oz Paintball Co2 tank???

Is the CO2 you get for paintball a food-grade? Some gasses used for non-food industrial purposes can contain trace amounts of oil.

    help with raspberry wheat

I've used frozen raspberries, but never used an extract so I can't give you a comparison. I'd say go ahead and make the kit per the recipe. You can always make another batch with fresh or frozen berries. But I agree with Verio about using 1.5 lbs for a 5 gallon batch. I used 2.25 lbs for a 3...

Is water that big of a deal in all grain?

Check with your local water district, they are required to publish water quality reports. For San Bernardino county check this page. Some of their reports are very detailed. Then read these links: All Grain Water Chemistry Brewing Information Brewing Water Chemistry Calculator

    Cherry Wheat

My experience: For a 3 gallon batch, I used 2lbs of frozen cherries, purreed in a sanitized food processor and added to the secondary. Personally, I thought it had too much cherry flavor and didn't really taste like a beer anymore, but when I brought some to a tasting session with some of my...

    Help with a "off" flavor?

You could try a yeast with higher flocculation than US-05, like Nottingham. Safale S-04 is really flocculant. That stuff sticks to the bottom of a bottle like clay, but it does have more of an English Ale flavor.

    Hop Frog IPA

Your bittering hop combination is interesting. Chinook is fairly high in cohumulone (31%) while Simcoe is one of the lowest at 17%. I'd like to know how that tastes. I have always thought that Cascade finishing hops go well with Simcoe bittering. Also, I like the Hop Frog name. It reminds me...

Foaming boil overs. When my boil gets too intense, I turn the heat down a bit and stand there blowing on it to keep the foaming down.

    5 oz priming sugar = 3/4 Cup ?

Yes, for dextrose (corn sugar) 5 oz is equivalent to 3/4 cup. I got a 5 oz pack of priming sugar in a kit. I poured it in a measuring cup, did not pack it, it was 3/4 cup.

Need to mellow out harsh alcohol

Try cleaning thoroughly several times with a strong bleach solution and a sponge. You will have to rinse it a lot too. If that doesn't work, try Dawn dish soap. If that doesn't work, soak in Oxyclean. If that doesn't work, you have to use fire :)

    Late Addition Extract?

I've checked the websites of many malt processing companies, trying to find out if a hot break is needed or not. From what I saw, one of the common ways of making extract is to heat the wort in a vacuum. The vacuum causes the boiling point to be at a much lower temperature. The boiling point...
