    American Light Ale

I have never made a blonde or light ale. Any thoughts on this recipe would be appreciated. As you can see it is mostly about the hops. I want to try the Chinook & Cascade for piney-citrusy flavors. Not sure about the grain bill, the 40L is mostly for a little color. Should I go with a full...

    Roof Replacement

OK, I'll give it a go: Hey. I need a new roof. I have an insurance payment that will pay for it, or most of it but would like a bit of guidance on how the system works, and whether the price is fair. I know it it impossible to estimate remove and replace roofing without measuring and...

    NC Sandhills

Hey. I want to get rid of my hops vines, one is cascade, one is chinook. Three years old, not very vigorous, free to a good home. But I would take a homebrew if you offered : ). I am in Pinehurst, NC and work in Fayetteville, so I could meet you, or you could come get them. I don't know if...

    Shanks

One of my favorite meals. Some really cool wild rice blend from Cheiftain wild rice. I have been thinking about trying a confit of lamb shank. It has the same individual muscle structure that duck does, and would probably be awsome. Maybe for Christmas.

    Maine?

My wife wants to move to Maine, and she has me half convinced. I am about ready for a change. Any maine-iacs out there that can tell me about Portland? How is the employment situation; cost of living, Utilities, attitude of the population, and such things. We will definately take a trip...

    Telescopic Baton

Does anyone carry one of these, and does anyone have any specifics about legally carrying one in NC? Casual reading on the internets leads me to believe I can carry it open but not concealed without a CC permit. I would very much appreciate any LEO perspectives. I have a handgun but it is...

    Smelly buckets

I got 7 free buckets from a bakery, with lids. They had iceing in them and I am going to store grains in them. They have a nice airtight seal. Thanks Reelale for the suggestion. Any suggestions on how to get the vanilla/artificial butter aroma out of them?

    45 Min AG Boil

60-min boil time is the standard, but I am not sure why. I am thinking about a 45 min boil for an IPA. I am also going to do a 45 min mash, which I have done in the past successfully. With these shorter times, I think I can get down to close to 3 hours for an AG batch. Baring any mishaps!! I...

    Bottling hops

I have been adding a quarter to a half ounce of hops to some of my beer 4 or 5 days before it is to be bottled. In some batches the beer has been in the primary or secondary for a month or 6 weeks. The dry hops I usually add 7 days after brewing, but I am thinking why shouldn't the dry hops...

    Dancing on the table

When my wife asks what I want to do for entertainment tonight, I reply, "Take off your clothes and dance on the coffee table." She thinks I'm joking and says, "No, don't be silly." Every guy on this site knows -- I am not joking. Wassup wit dat??

    Chopping/pureeing whole hops

I have trouble siphoning around the whole hops when I use them for dry hopping. So I chopped them in the food processor before adding them. Has anyone done this? I am not sure if it will clear, and I would like a clear beer. I do not keg, but I could use geletin and stick the secondary in the...

    New Crankandstein cleaning

I just got a crankandstein for my birthday from my lovely bride. Anyone who has bought one new: did just a few handfulls of grain clean the oily metal off as the instructions suggest? It looks like it is going to take a bit of work to get it clean enough to use. What has been your...

    Braised Labor day ribs

I know you are supposed to grill on labor day, but I like to braise beef ribs. Dry rub for two days, smear with tomato paste, roast until nice and black then braise in redwine, brown stock, and whatever else. Of course skim the fat.
