Cantillon interview on the Sunday Session

Just an FYI, it's on May 8th, and it's with Jean Van Roy himself. Personally I can't wait. http://www.thebrewingnetwork.com/shows/748

Putting in some taps this weekend

I've got three perlick taps that I am putting in the door of an upright refrigerator. I'm starting with three. I'm asking for advice, and tips before I start. I'll try to summarize what I know so far from reading various things. -Use a 1 inch hole saw. -Drill a narrow hole first using...

    Dead Chest Freezer

So I learned that My chest freezer died, by the fact that I come home today and see my fermenter's Ranco temp controller at 78 degrees. It wasn't a Belgian ale either... It is still making noise, but not cooling at all, no coolness on the inside walls. I guess this is what happens when these...

    Sour starter question

I made a 400ml starter from the dreggs of jolly pumpkin La Roja and Noel in a 1000ml flask. No stirring. I left it about a month, mainly because I wasn't sure which beer to add it to. It had a nice pellicle. I decanted it because I'm concerned about acetic acid from exposure to 02. I...

    Wyeast 3787/pater's biere

I brewed the AG version of NB's pater's biere last Saturday. Everyday I came home from work it's spilled all over the damn place. I used fermcap in the boil and double the dosage in the fermenter. It doesn't slow the krausen down one bit. The OG was 1051, a little high. I made a 1 liter...

I don't like primary fermenting in buckets

So I've done 2, 6 gallon kits thus far and I already see the need to replace by 7.9 gallon bucket that I'm using for primary. I see scratches at the bottom from stirring the concentrate with water, and recently I see a discolored spot at the bottom, which does not sit well with me at all. No...

    really really stuck poppet

So I tried to keg today and I see that I've got a really stuck in poppet. It is spewing co2 and I can't tighten it, I can't loosen it either. I've even tried hammering my wrench to loosen it with no success. I have other poppets, but I really don't want to lose a keg to this dumb problem...

    Kegging/fermenting space too low..

So I've got a 7cf chest freezer for serving with about 4 kegs in it, no real room for carboys, let alone two. I've got another chest freezer that is around 14cf that I use to ferment in. Well now the wife wants to reclaim a chest freezer and I don't think either is big enough for two carboys...

    Oak Dowel in Stopper procedure

Can someone give me a quick walk through of this procedure? I've seen pics and heard that most get the dowel from home depot or lowes and toast it themselves. This is intended to loosely simulate barrel aging (as much as possible without a barrel). 1. How do you toast it? 2. What...

    Your Best wine kit experience

Short and sweet. What's the best wine that you got from a kit? I've done one so far. The wine expert Symphony. It's been in the bottle for 5-6 weeks and it's pretty damn good, or at least my wife likes it. I'm hoping the mango/citrus/apricot will come out more after another 3 months or...

    Corking and capping like Cantillon

I'm going to get a floor corker, probably the Italian one, shortly for a wine my wife and I are making. Could I also use the corks and cap Belgian bottles (the kind you can actually cap that is)? I don't know why I want to do this other than it seems badass. anyone done this?

    Damn Honey Malt

So I brewed Northern brewer's Cream ale, which calls for honey malt(9%), biscuit(3%) and 2row (88%). I didn't actually buy from NB. I bumped up the recipe to allow for my horrible mash efficiency but leaned away from the specialty malts, because the last thing that I want to do is over do the...
