    Bottle conditioning

Does it make a difference actually putting it into bottles? I've kept some in a sealed carboy, and I just discovered some cider I had bottled. The cider seems to have aged excellently, whereas mead and cider I've kept in carboys still pretty much taste the same. Is it just me or does it have to...

    Oak cubes

Looking to get some oak cubes, should I get light, medium, or dark? I think I'm going to get American oak after reading loveofrose's post on his oak experiments. Also how much should I use per gallon?

    Hibiscus mead

I want to try a one gallon batch of hibiscus mead. My wife can already make really good hibiscus tea, or Agua de jamaica, so I'm wondering how much to use for one gallon? So if anyone has attempted this before or thinks might know please chime in. I don't think I want to add anything else just...

    Michelob lime cactus

Wondering if anybody has tried to clone this. I like the slight sweetness and slight cactus flavor you get in it.

    Muscatine grapes

So a friend gave me some muscadine grape juice. I guess there is several varieties called muscadine, I have no idea which one this is. If it helps I'm from east tx they were harvested near huntsville tx and were wild. I'd like to know if anyone has any yeast suggestions. I would prefer a little...

    Priming with honey

So I used a wheat beer extract and added 1.5 lbs honey to primary and want to use honey to carb, maybe add just a bit much so it'll retain honey flavor, how much should I use?

    Priming sugar

How much dextrose should I add to 5 gallons to prime? Also how much xylitol for backsweetening? We prefer a slightly to fairly sweet cider but not overly sweet

    Accidental wine?

So my wife had made strawberry, orange, lemonade and put it in an orange juice bottle. We just found it with a lot of sediment on the bottom, smells yeasty and is heavily carbonated. I took a tiny taste, enough to wet my tongue but no more, and it tastes dry and yeasty but not rotten. Is this...

    Quick drink cider

What is the highest alcohol cider you can make that is drinkable right after or very soon after fermentation? All that I have made are about 12% and need a few months aging. I'd like one that I could drink right away but I'd like it to be fairly high in alcohol.

    Honey beer

Im wanting to get a beer kit with honey. A while back my uncle made a honey wheat beer, was not a kit, that both my wife and I enjoyed. My wife does not like beer that one is the exception, my uncle did not write down the recipe or make it again. So I would like to start out with a kit, ive...

    Jao bomm

So I did loveofrose jao bomm 5 gal. FG was 1.124 I ended adding .020 gravity of honey during the middle of fermentation. It ended up fermenting out to 1.004. I added another .020 of honey and it hasn't fermented that. I also just cut up the whole orange and stuck peel and all in. After about...

    First mead flavoring

My first mead I want to make cinnamon vanilla. It is currently in primary. My question is should I put in the cinnamon stick and vanilla bean now or once I rack it into secondary? And either way how long should I leave them in? I definitely don't want too much cinnamon flavor just a mild to...

    First batch

Started my first batch tonight, I have previously tried to make apple cider, succeeded in the alcohol department not so much in the taste department. Decided I would give mead a go as it seems hard to screw and I always wanted to try decent mead. I used 3 gal. of clover honey to for a 1 gal...
