    How would you remove the sweetness? Fermenting with yeast and then boiling off the alcohol wouldn't cut it, I don't think it would drop below 3 or 4%. Maybe if you distilled it? I think you will be hard-pressed to get the beer flavor without the yeasts help. I will keep an eye on this thread...
