    Pumpkin Ale kit variation?

    For my pumpkin this year I used 2 cans of organic pumpkin roasted in my oven at 350 for 15 minutes. I dumped it right in the fermenter before putting in the airlock.

    Confirming good seal once capped

    Thanks for this. I tried it and didn't see any bubbles. I held it under with a brick for awhile and watched it. Hopefully that points to good things.

    Backsweeten with sugar?

    Remember you can always add more but you can't take it out once it is in. I'd make a small test subset and record measurements until I find the mix and them scale it up from there.

    Did you measure the OG on the batch? If you did no sugar added I think you'll end up around 5-6.5%.

    I think 2 might be a bit much. I'd taste it often. I think a 1/2 would be more on ratio for the size. My reference is some of the 5 gal brews use 2 cinnamon sticks.
