You can use gelatin without cold crashing. It will just clear slower and maybe not as completely.
There's no need to boil the water (I never have). Here's how I do it for a 5 gallon batch.
Add 1/2 cup cool water to a sanitized microwave safe cup/bowl/whatever.
Sprinkle 1/2 tbsp of gelatin...

1 - No you didn't pitch wrong. Dry yeast does not need a starter. I would just dump the whole package in. Over pitching does not hurt anything but under pitching can.
2 - You're looking at the wrong scale on the hydrometer. You want to take the number from the "Sp.Gr." (Specific Gravity) scale...

How did you mix in your priming sugar? I've had similar results from letting the priming sugar mix just by siphoning beer on top without stirring. More sugar solution remained in the bottom of the bucket so the first few bottles drawn were over carbed.

People make this way more complicated than need be. I clean my bottles after pouring from them (hot water + bottle brush and rinse a couple times), drain in my dish rack and store in cardboard boxes. Come bottling day I give them a short dip in Star San (letting an ounce or so into the bottle)...
