    Let me see if I understand your process.... You first juice your peppers, keeping the pulp in the container you will ferment the mixture in, mix the juice back into said container with salt and a sourdough starter, and then ferment?

    Do you do anything special to smoke the Cashews? I've done smoked almonds before. The almonds were soaked in salt water overnight before smoking. Turned out pretty good.

    It depends on what it is being used in. If it is a salad topping, I generally cook it to the point of being crunchy, so it crumbles.
