    Has anyone bought sorbated cider to backsweeten with. I noticed at Aldi I can get a gallon of cider for three bucks but it has sorbate, so no good for fermenting with. But could I use it for backsweetening?

    It's pretty much all I use. Maybe a little golden rod in the fall. It's all up to the bees for me. What they produce is what I use. I don't want to go out and buy honey when I don't have to.

    If I was to do this in actual five gallon whiskey barrels, would it be too oaky do you think? My wife agreed to get me a five gallon barrel for Christmas this year, and then I'll buy another at each new racking until I have three. I'm just worried about too much oak or too much whiskey.

    Fermenting 2.5 gallons in 5.0 gallons buckets?

    I do three gallon batches in five gallon buckets. But only for primary. If I'm doing anything that needs a secondary, I secondary in a three gallon carboy. Once the majority of fermentation is done, you want as little headspace as possible.
