    Yes your going to be fine. Take a hand towel, dip it in starsan mix, wring it out, put it over the top of the carboy. You only have to worry about air getting in. Once fermentation begins, the CO2 coming out of the carboy will keep the air out, just keep it covered lightly.

    Happy to report that Bangkok now has a beer revolution going on, found Stone, Deshutes, Rogue, plus an under ground brewer doing great APA's, IPA's, Stouts, and Porters. Not wide spread yet, but so totally better than when I was here 3 years ago.

    Fermentation done in 3 days? Raise Temp?

    Sour smell is probably carbon dioxide, by product of fermentation. Wait a couple of days, recheck the hydrometer reading, if it hasn't changed the beer is done. Keg it, bottle it, or let it sit and mellow for a month. It's beer, you made it, be proud :fro:

    How about you just let it ferment, take a hydrometer reading after 7-10 days, taste it, then determine if you could drink it once it's carbonated. In the future, let the wort cool to 80f, pitch at 80 or less, then control the temp at 67-70 while it ferments, bottle or keg. Even if it doesnt...

    I was divorced at 29 (married at 22) I turn 68 on the 4th of next month. Have dated women 20 years older, and 20 years younger, and everything in between. Are younger/older women better? I'm not sure yet, but I'll keep you posted as the research continues :o
