    Question with Russian Imperial stout

    I brewed an Extract Russian Imperial stout today. My OG should have been 1.109 but it ended up at only 1.096. Any input on how this might turn out? I am concerned that it is going to be missing a lot of flavor since the OG is so low.

    Risk of infection?

    Well, I made a bonehead move this afternoon. I dropped my un-sanitized thermometer in my must. :mad: Is must more resistant to infection than wort? What are the chances of an infected batch from doing that? :confused:

    Why is the LME addition so late?

    Usually when I brew a kit, the LME goes in at the start of the boil. I did a kit today and the instructions called for the LME is the last 5 min of the boil. Why is that?
