    Adding cherries to beer

I was thinking of using a 2 lb. bag of cherries but the juice concentrate looks to be a good idea. Morebeer has a kit for this but, it is a little different than the actual beer and I don't like the idea of cherry flavoring. I would rather use real cherries or juice. So if I use the juice...

    Adding cherries to beer

I am thinking of adding some cherries to a belgian strong ale. I had one of these and thought it was great even though I usually don't like fruity beer. The one I had was this one Tres Fem from http://halesbrewery.com/brews.htm I have come up with a recipe but I am not sure how many cherries to...

Not enough room for the dry hop

I've managed to get an ounce and a half of hops into the carboy. Should be plenty for a 3 gallon batch. It is now full and I am using a blow off tube as it is full to the top. I dry hopped with Simcoe, Amarillo, and Cascade. It smells awesome. I am going to bottle next week.

    Belgian Strong wit cherries

After tasting this beer, http://halesbrewery.com/brews.htm I have decided to make a similar one for myself. Morebeer now has a kit, (see below), but I want to come up with my own recipe. I was thinking of adding (thawed), frozen pie cherries to the secondary. I am just wondering how much to add...

Thanks for the input. I'll keep an eye on it and let you know how it goes.

Not enough room for the dry hop

I am going with a smaller dry hop. I gave it 3/4 of an ounce this morning and will give it another 3/4 tomorrow. If I can fit anymore I'll add it on Thursday. It is my first time with this recipe anyway so I'm sure I will tweak it a little next time. It will go fast so I'll have to brew it a...

Not enough room for the dry hop

I'm doing a Pliny the elder like beer and have about 3 gallons on a 3 gallon carboy. I've never dry hopped with this large of amount of hops before and didn't think about how much space 3 ounces of whole leaf hops would take up. I could reduce my dry hop amount, which would lessen the aroma or...

For the Newbs entering competitions for the first time...

I wish I had found this thread last week before I entered my first competition. Thanks for the info. I wish I could have attended the event instead of just dropping it off. I would have gotten a lot more out of it. I guess I did OK. I took second place in the category with a Belgian Specialty...

    Too much Cardamom...

I just tasted the final gravity sample of a Belgian wheat ale I made as a holiday Beer. Apparently 1 tsp of cardamom is too much for a 4 gal batch. It came through too strong. The beer looks great, fermented well but is almost undrinkable. I might re-brewing my Christmas beer this year. I...

Using a corny keg as a cask

That was kind of what I was thinking. I got the idea of a cask party after going to on at the Silver City Brewery the other day. They had a cask version of their gold medal Pale ale. The cask lasted 37 minutes before it was empty. I was planning on have friends over and consuming the whole thing...

Using a corny keg as a cask

I'm thinking of brewing a batch of ESB and carbonating it in a 3 or 5 gallon keg with some corn sugar and having a small cask ale party. I was thinking about just connecting a faucet to the keg and laying it on its side for dispensing and having an open disconnect on the gas side to let air in...

    Kona Brewing Koko Brown Ale

Redhook, Kona, Widmere are essentially the same company, AKA Craft Brewers alliance. I think they also own part of Goose Island. I always describe the Koko Brown as a liquid Mounds bar with alcohol. It is great. Although I think I would get tired of it if I had a whole keg of it, whether it...

Starter for a 2.5 gal to 3 gal batch

I'm going to brew a 2.5 gal porter with an OG of 1.050 and plan to use some washed wyeast 1968 from an ESB brew that I did a while back. How big of a starter should I use? I was thinking of less than a quart. Maybe a pint with a quarter cup DME. Any suggestions..
