    A couple of thoughts: 1. Is it possible that you had more water than you thought? In my limited experience when I miss SG with an extract its because I messed up my water volumes. 2. I know you calibrated your hydrometer. Did you temp correct for the temp of the sample? Just my 2 cents

    Fermentation in Florida

    I brew 5 gallon batches in the garage in Florida year round. I just use a fishing cooler, and put the carboy or fermenter in there with some ice packs. Only have to change the ice packs once day. Really easy, very low maintenance, not very expensive, and can fit in a closet

    the patience part is hard, but it does get easier. As others have said, give the yeast their space. Nothing good comes from popping that lid unless you have a good reason. Congrats on your first beer!:mug:

    Don't be afraid to taste it...it wont make you sick. From what I've seen in the few pictures you posted you're probably OK
