I think I must be crazy. I bought some goat cheese, and tried it out today. To me, it tastes like plastic, or a solvent of some sort. SWMBO says it tastes fine, and I can't find any references to goat cheese and plastic/solvent tastes.

Is there anyone else with a similar experience? Maybe it tastes like paint or something to you?

See, ya gotta quit milkin' the plastic goats! Those are just ornamental! Go with the ones that move around and eat hay and stuff.

I use the term "Astringent" and you nailed it. It has that taste. Mostly it is in the rind.

I do not like goat cheese by itself, but I love it with spicy food, or a fruit chutney. The key is a sweet and vinegar combination with it, or spicy. It is great for cooking with because it holds its own.

Luck

I love sheep and goat cheeses. But I'm lactose intolerant.

Try feta and see if you still taste it. Its usually 70% sheep and 30% goat.
