OK, we know these:
"Water chemistry of classic brewing cities
Pilsen Dortmund Munich Vienna London Burton Dublin
Calcium 7 225 75 200 52 268 118
Magnesium 2 40 18 60 16 62 4
Sodium 2 60 7 8 99 54 12
Chloride 5 60 10 12 60 36 19
Sulfate 5 120 10 125 77 638 54
Alkalinity 14 180 152 120 156 200 319
But what about OUR cities like Chicago, San Diego, Seattle, Santa Rosa, Waterbury, Placentia, Bend, etc...
All of these cities have excellent to outstanding breweries residing in them who presumably use local municipal or ground water for their brewing needs. They may alter the water in some way before brewing, but it would be helpful for anyone making a clone or trying to fit a recipe into the same style as one of these brewery's beers to know where their water started.
My challenge to you HBT is to scour your resources and post water profiles for cities with great breweries in them. If you live in Bend Oregon, and you know what your water looks like on a lab report you better ante up. I don't believe I've ever had a bad beer from Deschutes.
