I'm almost done tweaking a Black IPA recipe for a competition at a local brewery and havent set on a yeast yet. I was thinking WL Cali V or wyeast american ale I or II.

I just thought of another yeast that could work. Yesterday Saint Arnold released Endeavour their DIPA or Divine reserve 11 and said half their batch was unfiltered and has dredges at the bottom. Which i got two of those bottles. I'll should use their house yeast to use in my brew. I probably need to make a starter but i dont have a stir plate yet. Is there a way to make a starter without a stir plate?

Any thoughts?
 
I cultured some yeast from a bottle of saint arnold's pumpkinator. So far I've used it in an alt and a brown ale. It dropped the brown ale from 1.089 to 1.015 in two weeks, could of been faster than that but that's the first time I checked. It floccs like crazy as well, the alt was crystal clear without any fining, cold crashing, etc.

I just added the dregs to a mason jar with 100ml of 1.040 wort and put some foil over it. Took about a week to show any signs, I about dumped it.
