Making strawberry wine,, cant get the ICV D47 yeast,, what to use instead,,,, think was told the 118, but not sure,, thanks for any input,,,
 
Being a rookie wine maker, 118 has its place. It’s a monster and some love it. It would be almost my last choice.
Someone who knows their head from their bung hole will be along soon.
 
I've made strawberry for a number of years now with D47. The flavor is quite good but the color is always light. So this summer I ran an experiment of strawberry across 4 different yeasts: D47, Rc212, GRE and BM4x4. All fermented fine but I saw a little better color with the RC212 and better flocculation with RC212 and GRE. See attached picture at the end of fermentation.

Bottom line is that any wine yeast will get you there but each has its own quirks. While EC1118 is a clean (and boring) fermenter, it is not a bad choice for a fruit wine since the fruit already has a ton of flavor to start. 71B is another good fruit wine yeast.

. im a newb and havent used ec1118 but EC1118 in the distililling world is for a very nuetral/vodka spirit.

After knowing that its also my last choice for wine yeast as i want to maximise flavour not minimise but i am still a beginner so what do i know lol
